Can I eat Seitan if I have had gastric bypass surgery? I need to keep my proteins up and I am finding it difficult to eat meat, etc.
I need to follow a high protein, low carb diet. To my knowledge I do not have a gluten intolerance, but that could have changed since the bypass.
Please advise.

These days it is so much easier using Vital Wheat Gluten, no kneading and washing. I think that I have eaten it probably 3 times a week for 60 yrs and have never had a problem. I do not use soy sauce and all that salty stuff in mine. I am not a vegan so I use vital wheat gluten and mix a can of salmon, or smoked fish, into it with green onion and dill, lots of black pepper, and it makes the perfect burger that won’t fall apart and gets a beautiful crust. I also make Chicken Seitan but I use the gelatin that accumulates from rotisserie chicken. I mix about a 3/4 of the gelatin slightly heated to liquid and just add that to 1 cup Vital Wheat Gluten, form into a log and pressure cook it in chicken broth…I like it better than the chicken. The rotisserie chicken that I make only has pepper and herbs, no salt, so it is healthy…I make it for my 3 dogs.

Of course, it’s necessary to accompany seitan with a vegetable (raw and cooked), rice on the side (or potatoes or pastas). I also have a starting course: a salade (with sprounted beans if possible) and finish with a dessert of fruit or vegetable milk enriched with calcium and b12.

Any processed food should me eaten in moderation. If you make seitan (from vital wheat gluten) at home it is better. Eating tofurkey all the time isnt the greatest option. Processed meat alternatives (veggie burgers, sausages fake meats) are good for in a pinch or for a craving or just in moderation. A vegan diet should be focused more on protein sources like tofu, tempeh, beans, rice legumes and whole grains. :) You can even make sausages from beans (and homemade seitan) and burgers from beans!

you dont need to worry about balancing it with anything else – new science suggests that as long as you consume an array of protein sources throughout the week your body will get all the amino acids it needs. But for an idea – a popular meal in my home is a seitan slowcooker roast. The dough of seitan has nutritional yeast in it as a dry ingredient (packed with protein and vitamin B12). Also – when i make it i throw potatoes (protein) and carrots in the pot. I sometimes steam broccoli on the side (protein). As you can see this is a complete protein meal!

It is an excellent source of lysine. When you make the dough for seitan, many recipes call for nutritional yeast to be added. This makes it a complete protein. As long as you dont have a gluten allergy it is safe. Nowhere near my home sells pre-made seitan, but its fun making it from scratch anyway. Usually when you make your dough (wet and dry ingredients) many of the ingredients you put into your dough have lots of nutrients! I made a recipe for vegan “ribs” from seitan which had blended dehydrated mushrooms, tomato sauce, and onions in the wet mix! SO NUTRITIOUS :D btw unfermented organic soy being unhealthy has been debunked. Long story short, if you dont have a wheat allergy MAKE SEITAN! <3 its so amazing !

Hi Rosie … we recently rewrote this article and, as you can see, we now say that if you don’t have a gluten allergy, then making your own seitan or bread for that matter is the way to go!

For the past 7 days, I have been experiencing achy legs, arms and hands to the point where it’s painful. Also, my thinking is not clear – my mind has been very foggy and almost where I’m in a state of confusion.
Could all these symptoms be from eating this seitan/having a reaction from a high dose of gluten? I’ve always eaten bread, pasta and cereals and never had a gluten problem.
