Actually people with diabetes shouldn’t eat or drink anything with coconut. It’s worse for you than natural sugar.

I’d love to try but it feels scary because all the dates and maple may really feed pathogens in the gut. What do you think?

We use organic dark cacao. Excellent when topped with real organic whipped cream, or, fold in whipped cream to make mousse! A staple dessert at our house. :-)

I would do chocolate protein powder instead of or as a part of the cacao ingredient. You could do 1/2 cup protein powder and 1/4 cup cacao or however you like. If you want a more chocolate flavor, you can always add a little more cacao than what is called for.

How much and is it just an extra ingredient or in place of another one?

Can also add 1 cup of coconut cream in place of the maple syrup and water – add stevia to sweeten. Yum!

Soaking the dates helps to make them soft so they can be easily incorporated into the recipe. You can soak them from 1-3 hours.

Also, when soaking the dates, is it same process as sprouting and dehydrating where you have to add salt to the water?
