I know I’ve mentioned in the past that I love easy simple recipes that I can whip up using pantry items. Let’s face it, there are just times that we don’t have something in the fridge, or we forgot to pull meat out of the fridge. Oh, here I go again. I assume that everyone else has the same issues that I have. I apologize if it’s just me having the problem, but the recipe is still good. This recipe comes together so quick. Give yourself… oh, maybe… 15 minutes! Yes! I’m serious! Quick, easy, no prior preparation. And it’s healthy as well!
All you need is some olive oil, a can of Kirkland chicken breast, can of plan beans and taco seasoning. Grab a frying pan and put in a few tablespoons of olive oil in. Shred the chicken and toss in as well. Depending on your preference you can use a tablespoon or a few tablespoons of taco seasoning. Stir it up really good. throw in the beans and stir up some more. I actually will probably saute some green bell peppers and onions next time to add to it. Or if I want to keep it a full pantry meal a small can of green chiles would be good as well. Truth is I actually prefer not to add more calories to this dish, so it isn’t actually a filling for me. Unless you count it filling my stomach… ugh that was awful. I really am no good at impromptu jokes, I apologize. I guess I better give you the recipe.
Chicken Taco Filling
Serves 2 – Calories/serving 235
2 tablespoons Olive Oil
1 Can Kirkland Chicken Breast
2 Tablespoons Taco Seasoning
1 Cup Black Beans
Directions
Add 2 tablespoons olive oil to pan. Add chicken and shred, add taco seasoning. Stir well and add black beans. Toss in frying pan till heated through.
Optional: Add to bun, taco shell, or tortilla. Sprinkle cheese on top if desired.
