Healthy Lunch: Avocado Toast with a Twist

When I was trying to create a lifestyle change it was important to me to have some joy in my food. Not by having sweets or fatty foods all the time, but by finding the right foods and flavors to still be able to enjoy my food in a healthy way. It’s been interesting figuring out the right foods and then making recipes that I can really enjoy. To be able to be successful in this endeavor, I needed to have foods that I could see myself continuing to eat even after the weight loss. I have found lots of great healthy recipes. Including some easy pantry meals. Things that I can make by just going into my storage room and finding a few canned goods and still making it something tasty. Especially for busy days that I am not prepared to spend hours making an amazing meal.

I am a big fan of avocado. I know that avocado toast is hardly a new thing. It’s a popular healthy light breakfast or side. It’s a great healthy choice. However, my husband and I have been doing our own version of avocado toast that is really tasty. Usually, this dish involves the two obvious ingredients, avocado and toast. I know shocker, it’s the name of the whole thing. Some people like to add an egg on top. Our version involves all of that and more. Adding a little salsa, a little mayo and even a little relish goes a long way in elevating the flavor without adding hardly anything to the calories.

There are three different parts to my version of avocado toast. The first one is the toast. My husband prefers toast that is pretty far along toasted. I am more of a lightly toasted person. He would like the toast to have some of the bread blackened. I don’t want to see a speck of black on there. The second part is the avocado. We mash the avocado and add some salt, a tablespoon or two of salsa, and a pinch of salt. Kind of like our own little version of guacamole. The third part is an egg salad. A hard-boiled egg, some light mayo and a tablespoon of dill relish.

Avocado Toast

1 piece toast

1/2 avocado

2 Tb Salsa

a pinch of salt

1 hard-boiled egg

1 Tb light mayo

1 Tb Relish

Avocado mix – combine avocado, salsa and salt in a bowl and mash. Spread on toast

Egg Salad – combine egg, mayo and relish in bowl and mash. Spread on top of avocado on toast
